"What is a Truffle? It's a European confectioner mixed chocolate and heavy cream to form a ganache - the smooth, creamy center of a truffle. The ganache or center was then shaped into small spheres, dipped in chocolate and then set on wire racks. These chocolates were made to resemble the delicacy of the most prized mushroom, The Black Truffle. Because of their similar appearance, rarity, and the status they share as delicacies, these chocolate confections became known as truffles."
